Those New Year's Resolutions are coming right along! I've started my food blog and have a whole two followers (yay!), have 100 pages left in my book (The Book Thief), and did a photoshoot with lovely Sydney and Voldemort-y Michael yesterday. There are so many good photos - I can't wait to share them with you! Actually, my editing is all done (I like my photos right out of the camera most of the time and the only editing I really do is playing with lighting and coloring) but I sent a few pics to my cousin who has Photoshop to try and get some annoying branches out of their faces. I'm really bad at waiting to share good news or good photos or good anything soooo here's a little preview! (Don't ask me why the photos are blurry when you click on them. It's not my fault. It's Blogger's fault.)

The website, and article, are decidedly biased, but there is still something to be said for the irony of deeming a NATURAL byproduct of organic matter some evil and dooming toxin. It is waste, indeed, but it is also life - perfect balance. They (the greens) are right though, we are out of balance...in the people we elect, in the products we buy and in general the way we think...

Are Obama and the rest of the "one-world" leaders eugenicists? Perhaps indirectly, but a vast majority probably aren't intentionally. They are just too stupid to realize that the tighter you hold on to something, the faster you choke it to death. They need to take Master Oogway's advice:

Squash Cookies and Muffins

Adapted from this recipe. I doubled all the spices, added a tiny bit of vegetable oil, and cooked the muffins at 350 F for 20 minutes.

If you like pumpkin things, I recommend you try these squash cookies. Yes, they sound weird but butternut squash becomes really soft and sweet when baked in the oven at 400 F for about 20 minutes. (Just be sure you sprinkle some water over them before baking or they will burn).

Next on my list of fall recipes to try: pumpkin butter!

Yesterday I concocted a recipe. So let me share it with you! Sorry I don't have pictures but I left my camera at home :( and my roommate and I were pretty focused on watching Hocus Pocus. I highly recommend trying out my recipe as it was very good!

Chicken thigh with fontina wrapped in proscuitto
1. Preheat oven to 375 F.
2. Wrap a boneless, skinless chicken thigh around a small piece of fontina cheese and sprinkle with salt and freshly ground black pepper.
3. Wrap it all in one layer of proscuitto.
4. Set on a lined baking dish and sprinkle with extra virgin olive oil.
5. Bake for 20 minutes or until chicken is cooked through.

I served my piece with cranberry-walnut bread that I toasted with fresh mozzarella and topped with a roasted roma tomato (I roasted roma tomato halves - deseeded - on the side with the chicken).

I've been toying with the idea of starting a food/recipe blog. There's lots of them out there but none of a college student who loves Giada and Ina and cooks things like filet mignon and shrimp on a weeknight (much less a weekend). And that way, I can also take photos more often (since it seems like taking photos, something I used to...I mean, still...love has become more of a chore since I don't have much free time). Should I do it?

Well, while I ponder that...here's something new I'm trying at this very moment! It's cold-brewed iced coffee. Indeed. I put mine in a Sweet Leaf tea glass I saved (reduce, reuse, recycle!) and it's in the process of brewing for 12 hours until tomorrow morning. I'm excited to try it!

1001 Books You Must Read Before You Die

I wanted to buy this book from Anthropologie over a year ago. It's originally $35. Now it's on sale for about $15. I got really excited, thinking that now I could buy it. But then I thought a little bit more and came to the conclusion that for $15 I could buy two books from Half Price Books. I'd say that's a better choice. That way, I can actually get two steps closer to reading all 1001 books! And then I found the list online! Isn't it great how things work out like that?

Of the first 100 on the list, I've only read 5 (#s 19, 28, 42, 86, 93).

I've had this fascination with elephants for a very long time. I think they are so cute and precious even though they are monstrous and have a funny long nose. I think I fell in love with elephants the first time I watched A Little Princess (with Liesel Matthews, not Shirley Temple). It's one of my favorite movies. I adore my roommate. Simply adore her. I've never gotten a chance to experience how it would be living with someone you share so much in common with and actually really like. My roommate freshman year turned out to be a crackhead dropout and my roommate for the past two years was, well, very different from me. Going into senior year I just really wanted a good roommate and I think I've found her! Although this means we spend way too much time talking and laughing and not nearly enough studying, I'm so glad to be living with her.

And just so you know, we promised to start studying hard next week ;)

I love kids. Gah. I just love them. I remember when I shot (photos of) Amaris, she was not having a good day (runny nose, fussy, almost naptime) but by the end of our hour together, as we were walking back to the entrance of the sculpture garden, she took hold of my finger. Her mom was really surprised and said that Amaris doesn't warm up to anyone and rarely even holds her own mother's hand! And today after babysitting Benjamin, when his mom came home, he went to her and whispered, "Mommy I had so much fun!" He also asked why I couldn't come play with him Wednesday and I told him because I had tests Thursday and he said, "but I said Wednesday..." Haha aww :) I love kids.

On a completely different note, I have decided to venture into making homemade ricotta. Wish me luck!

While I don't disagree that we have an effect on our biosphere, I would highly caution against falling prey to politically agendized fear tactics. Politicians and governments alike do not care about the environment, only power. Do not let them take your liberty away in the name of safety. Earth will be here whether we are or not. Also I wrote this in response to Sydney's post and even though I'm pretty sure I've talked and talked about being green enough, I thought I would repost here (for your reading and "ugh Alice freaking stop with the green!" pleasure)

So I'm a huge tree hugger (minus the actual tree hugging) and am really passionate about saving the Earth for future generations. So here goes a few points:
1. Reduce, reuse, recycle!
2. Unplug appliances (TV, computer, cell phone charger) if you aren't using them explicitly.
3. Buy a reusable grocery bag for less than $5 at most places. I have three from Whole Foods that I use for groceries, picnics, shopping, etc.
4. Get a water pitcher with a filter or a faucet mount. Plastic water bottles, even though the companies boast using less plastic, are still bad for the environment and most go in dumps, not towards recycling.
5. Use ziploc containers or other plastic storage containers to tote sandwiches, chips, cookies, etc. instead of plastic bags.
6. Open windows and use natural light as much as possible.
7. Take your own mug to Starbucks. You can save the cups and save 10 cents on your drink!
8. M. Mcgough above said to reuse the disposable metal cupcake tins - I use silicone ones so you don't need tins or paper liners. And they will last forever.
9. Read my 40-page research paper on the Prius and its environmental effects.
